Leek and Sweet Potato Soup
This soup builds energy, improves digestion and strengthens the liver, lungs and kidneys. Both its texture and ingredients may help people who have problems swallowing. It is warming, calming and comforting.
- 3 leeks, sliced
- 1 teaspoon butter or oil
- 1 litre chicken stock
- 4 potatoes, cubed
- 1 sweet potato, cubed
- freshly ground pepper
- handful fresh parsley
- yoghurt
Serves 4
In a large saucepan with a heavy base, sauté leeks in a little butter or oil on low heat until they are soft and clear. Add stock and potatoes (including the sweet potato). Cover and simmer for three quarters of an hour. Add pepper and parsley. Blend and serve with a dollop of natural yoghurt and extra parsley.
